Back to School Peanut-free Granola Bars

It’s back to school time!  Freshen up your snack ideas and include peanut-free options to be mindful of our classroom friends (like my daughter) with peanut allergies.  Share these tips with families, kids, & teachers who are looking for snack ideas at school.  

I recommend making several batches of homemade treats and freezing them!  My peanut-free granola bars are delicious and store well so you can pull out a bar at any time.  

Recipe

Serves: 10

Prep Time: 8

Cook Time: 20 mins

Ingredients:

½ cup Sunflower butter

⅓ cup maple syrup

2 Tbsp vegetable oil

1 egg

1 tsp vanilla extract

2 cups Gluten-free rolled oats

2 cups Rice Krispies cereal

1 tsp salt

¼ cup allergy-friendly chocolate chips

¼ cup raisins 

To taste: sea salt or melted chocolate to drizzle

Directions:

Preheat oven to 350 degrees.  

Mix together wet ingredients: sunflower butter, maple syrup, oil, egg, vanilla extract, in a large bowl.  

Mix together dry ingredients in a separate bowl: gluten-free oats, rice krispie cereal, salt.  

Combine dry ingredients to the wet ingredients bowl and stir.

Stir in chocolate chips and raisins.  

Pour mixture into a greased/lined 8×8 pan.  Press batter into pan.  Bake for 20 minutes or until browned.  

Add sea salt or melted chocolate drizzle, to taste.  

Chill in the refrigerator for 30 mins.

Cut into bars.  Use wax paper to separate each bar and store in a sealed freezer-safe container.  

Make several batches and take out individual bars as needed.  

Costing out each bar:

½ cup Sunflower butter $1.34

⅓ cup maple syrup $1.84

2 Tbsp vegetable oil $0.11

1 egg $0.11

1 tsp vanilla extract $1.00

2 cups Gluten-free rolled oats $1.46

2 cups Rice Krispies cereal $0.45

1 tsp salt $0.01

¼ cup allergy-friendly chocolate chips $0.68

¼ cup raisins $0.25

To taste: sea salt or melted chocolate to drizzle

Total Recipe costs: $7.24 divided by 10 serving bars = $0.72 per peanut-free granola bar
